Our lambs are growing out to a hanging weight of 85 lbs, with a +/- spread of 5lbs. The resulting cut outs are larger than average, making for beautiful center of the plate option, where your 8 bone racks are weighing an average of 3.5 lbs, boneless legs at about 6.25 lbs and Shanks averaging 1.15lbs.
